Paleo pancakes that are also Simply Filling/Core

So I have a number of friends that have dabbled in the whole "Paleo" thing. As with all else I think, hey, whatever works! Personally it's a little too much meat for me but I find that there are a number of really great recipes that can be ported over into my eating style which is Simply Filling technically but I like to follow more the old Core program. (I'll be doing a post on that later)

So here is my version of these pancakes. That's a pic I took of my efforts a while back. My main suggestion when making these is to think silver dollar size or less. Because there is no flour they tend to be a bit tricky and so getting the right temp to cook them is a bit of a learning curve. But they are TOTALLY worth it once you do. So without further ado....


Amie's Paleo Pancakes with Balsamic Berry Sauce


1 Banana
2 eggs
1/4 tsp vanilla extract
Cinnamon or pumpkin pie spice to taste

1 cup frozen berries of your choice (i use small wild blueberries)
1 TBS Balsamic Vinegar
1 or 2 tsp sugar substitute (i like erythritol)
Water added as needed to create sauce

Unpeel banana and cut into pieces in small bowl. Crack both eggs into bowl. Using handheld immersion blender whirl until mixture is completely blended and lump-free as possible. Place bowl to the side.

In small sauce pan combine the berries, sugar, vinegar and water. Place on low and let become "saucey" checking often as it cooks.

Now in medium non-stick frying pan over a medium flame pour a half dollar size amount of batter into pan. Let it cook like a normal pancake, checking it only when it starts to bubble a bit. Then flip. Now as I said there is a slight learning curve on these, so experiment a little with the heat and size of the pancake until you get it down. After each pancake is cooked I place it into a covered glass dish so that it doesn't get cold as I cook each pancake. 

When all pancakes are made, plate it up real nice and pretty and spoon that delicious berry sauce all over the top.  Eat with a nice tall glass of skim milk.

  2. Basically in a nutshell if it's a whole grain, fruit or vegetable, lean meat(or protein like tofu) or nonfat dairy + two teaspoons of good oil.....I don't track it....anything else I track with Points+ using the weekly 49 Points+ you get when you are following Weight Watchers.
    there are some slight differences between the old Core plan and the new Simply Filling Plan which as I stated I'll go into later :)
